Ingredients –

  • olive oil (2 tbsp)
  • 2 large eggs
  • 2 minced cloves garlic
  • 1 small onion
  • 8 ounces sliced mushrooms
  • 1 head broccoli, cut into florets
  • 1 chopped zucchini
  • frozen corn (½ cup)
  • frozen peas (1/2 cup)
  • 2 carrots, peeled and grated
  • cooked quinoa (3 cups)
  • fresh ginger (1 tbsp, grated)
  • soy sauce ( 3 tbsp)
  • 2 sliced green onions
  • Sriracha, for serving

Method –

  1. In a saucepan, heat 1 tbsp of olive oil over low simmer. Add the eggs and fry it till they are cooked. Let it cool.
  2. Now heat another 1 tbsp olive oil and cook garlic and onions in it. Keep stirring it until the onions become translucent.
  3. After that, toss in mushrooms, broccoli and zucchini. Stir them continuously until the vegetables are tender.
  4. Now mix in corn, peas, carrots and quinoa. Again cook it while stirring continuously.
  5. Combine ginger and soy sauce to the cooked stuff and keep stirring again for about 2 minutes until they are thoroughly mixed.
  6. Stir in green onions and eggs.
